Project Pollo Brings Plant-Based ‘Chikn’ Sandwiches to DFW Fast-Food Patrons

It can be challenging to find good vegan food, even with the scores of new restaurants opening in Texas. Luckily, Dallas will soon be home to Project Pollo.

The San Antonio-born vegan fast food restaurant comes from founder Lucas Bradbury, who developed the concept after consuming a plant-based diet himself and encouraging his parents to do the same. 

Now, after a long-anticipated wait due to COVID, Bradbury will open his first Dallas location in mid-February. Originally slated to open sometime back in 2021, Project Polo suffered several setbacks regarding the virus and contractor issues.

“We hit a lot of hurdles due to contractors not pulling permits on work done prior to our lease,” a spokesperson for Project Pollo shared.

The vegan restaurant continues to make strides, however. From humble beginnings — Project Pollo began as a food cart in 2020 — the restaurant now has locations in its home base of San Antonio, as well as in Houston and Austin. 

Now, after a long wait, Project Pollo is set to open in Dallas in an attractive spot with live music, plenty of space, and great vegan food.

For those unfamiliar with the menu, Project Pollo is all about its chicken-less ‘chikn’ sandwiches, made from a soy-based chicken substitute that you can get grilled or fried. The restaurant serves breakfast and lunch.

Fan favorites include the Spicy Project, fried ‘chikn’ with a spicy garlic Buffalo sauce and ranch, and the Nashville Hot, a spicy ‘chikn’ sandwich on a brioche bun. Other favorites include Loaded Papas smothered in Credo Cashew Queso and The Deluxe, their classic ‘chikn’ sandwich with bird sauce. The menu also includes burgers, salads, wraps, and more. 

Project Pollo will open in the spot formerly occupied by the Start restaurant chain, at 4814 Greenville Avenue.
