‘MixTitos’ Ghost Kitchen Serves Up Mexican Dishes with a French Twist

Two weeks ago, Chef Jose Luis Rodriguez officially opened MixTitos Kitchen, serving Mexican dishes with a French flair. Operating from a ghost kitchen in downtown Dallas, Rodriguez hopes to build a customer base and someday open a full-fledged sit-down restaurant.

According to The Conversation Journal, a ghost kitchen is a professional-grade kitchen with no servers and no indoor dining areas.

MixTitos Kitchen is a tenant of the Commerce Fork Food Company, located at 921 W. Commerce Street in Dallas. Some twenty-five different chefs and entrepreneurs rent the kitchen space there to create their own unique recipes. 

Customers can order food for delivery from the ghost kitchen using apps like GrubHub, DoorDash, or UberEats. Although there is no dining room at the facility, there are some picnic tables outside. Also, carryout orders can be made by walking in and ordering from the kiosk.

Rodriguez stated, “It is a really good concept. Here you have the opportunity to come and deliver what you’re looking for at the restaurant you will be opening.” 

Although a ghost kitchen is not a new concept, the COVID-19 pandemic accelerated the speed of its growth. Allied Analytics LLC estimated in 2021 that the global market for these businesses in five years could reach $71.4 billion and grow twelve percent a year. 

Rodriguez worked in the restaurant industry for around twenty-two years as a server until he decided to follow his own motto: “If you don’t build your own dream, someone will hire you to build theirs.” For Rodriguez, opening his restaurant in the ghost kitchen is just one more step towards building his dream. 

MixTitos Kitchen, which describes its menu as “American-Mexican-French fusion cuisine,” offers a variety of unique dishes to choose from, including salads, pompons, ‘chi-la-kuiles,’ enchiladas, tacos, potatoes, saffron rice, ‘mix-croque monsieur,’ and ‘shrimp a la mixte.’
