More than a decade after opening its flagship location, a popular burger joint in Richardson has reimagined its offerings with a smaller menu featuring more economical choices.
Haystack Burgers & Barley, a chain of burger spots in North Texas, has rebranded its original location at 100 Central Expwy. #17 into a new concept called Little Stack. Co-owner Jenny Galvan, who runs the restaurant with her husband Kevin Galvan, says the move is intended to offer patrons a more affordable meal out.
“We want people to be able to go in and have lunch for under $12, but still get Haystack quality,” said Jenny, per CultureMap Dallas.
Haystack has seen a lot of change over the years. The original restaurant opened in April 2013 in West Richardson before expanding to five locations. Following the pandemic, Haystack consolidated to three spots.
As inflation has continued to grow, Haystack has struggled to offer affordable prices. With a full meal costing upwards of $20, Jenny says they never envisioned having to charge that much for burgers.
Instead of closing, the Galvans decided to pivot and offer a quicker and more affordable lunch destination. While the prices are lower, Kevin says Little Stack still offers the quality people have come to expect.
“We still don’t have a freezer or microwave; we’re still making everything fresh in-house,” he said.
Little Stack visitors can expect a menu featuring three burgers, made with three-ounce patties, roughly half the size of those served up at Haystack. Of course, those hankering for a heartier meal can opt for a double or triple patty.
In addition to burgers, Little Stack also offers chicken fingers, grilled cheese, hot dogs, and more. While Signature Baking Company still supplies the buns, russet potatoes have been swapped for Kennebec potatoes for the fries.
Only the Richardson location has been converted to the smaller-burger format, while the other three spots in Lakewood, Hillcrest Village, and Frisco remain unchanged.
“Richardson is the OG,” said Jenny, according to Culture Map. “It really is so special to us, and so we want to be around for a long, long time in this neighborhood.”
