ChopShop, a new garage-themed restaurant, has opened at Victory Park. ChopShop comes from the restaurant group Rock Libations, which is also known for the former restaurant Shooters located at 3030 Olive Street. Following the closing of Shooters, the group revamped the space, reopening their latest endeavor as a new garage-themed restaurant with a bar.

ChopShop is now run by Cole Babb, the son of Rock Libations co-founder Josh Babb. Cole Babb shares his love for the restaurant business along with his dad. Taking on ChopShop is something he feels confident in doing.

“I’ve been working with my dad in the restaurant business since I was 13-14, doing a little of everything, from helping with invoices to bartending, once I got old enough,” Cole shared. “I also worked at Shooters, so that gave me some insight on how to be successful in this location.”

Babb shared his knowledge of the area and its demographics, which will help in the success of ChopShop Victory Park, located right next to the American Airlines Center.

“It’s completely event-driven, so that’s about 4 to 5 nights a week when you’re going to be mobbed, and then not so much on non-event nights,” Babb stated. “Shooters was going well until COVID-19 hit. It reopened, but it never really came back, and it seemed like a good time to introduce ChopShop.”

The restaurant and bar are decked out in car parts, with some of the menu named after the same. From Spark Plugs, jalapeños poppers, to The Buick, a patty melt, to Boss Hog, a burger with all the fixings. Car lovers will find themselves amused and at home in a car lover’s heaven with both good food and plenty of tasty drinks.
