Mexican cuisine pop-up restaurant Molino Olōyō is set to open a permanent location in East Dallas.

The James Beard Foundation recognized cuisine from Olivia López and Jonathan Percival, known for its temporary spots, private tasting dinners, and catering, is set to have a full-time home in the city. Starting next year, Dallasites will be able to enjoy the popular Mexican fare known for its use of heirloom corn and regenerative farming.

“If I could give MO 10 stars, I would. Incredibly delicious food from two food entrepreneurs that are passionate about their craft and ensuring community and happiness through cuisine. Jonathan and Olivia are equally impressive in putting on a pop up experience as they are doing customizable high end catering. I can’t recommend them and their food enough!” said one user on Google, where the Molino enjoys five stars.

The permanent spot is expected to open at 4422 Gaston Avenue. A recent Instagram post says the restaurant will begin welcoming hungry patrons sometime during the first half of 2026.

“You believed in us when we were delivering tamales and tortillas to your doorstep. You waited for specific days, sent DMs, stood in long lines, and still came back when we sold out — thank you,” read the social media post.

The restaurant will include a multi-course tasting room where guests can enjoy culinary delights like pecado con moles. The location will also feature a street-style Fonda, or tavern, serving items like wagyu suadero tacos.

“To those in the industry who welcomed us into your homes and even let us take them over for a night — thank you,” continued the post from Molino Olōyō’s official Instagram page.
