The State Fair of Texas is just around the corner, and like past years, visitors can expect plenty of classic eats, as well as some new food and drink options.

Here are just some of the newer selections you will find on the fairgrounds this season.

Birria Ramen Bowl

This new addition includes a bed of ramen mixed with cilantro, corn, and crispy onion. On top of the base layer, you’ll find tender Birria meat smothered in melted Monterey Jack cheese. The creation is served with a consommé to keep you fueled for a long day at the fair.

Cajun Stuffed Seashells

Jumbo pasta shells are served up with shrimp, andouille sausage, secret sauce, rice, and cheese. One order comes with three shells with Cajun Alfredo dipping sauce.

Cornbread Doughnut

This delectable treat is created using a blend of southern cornbread mix and traditional cake batter, “then topped with an added touch of Amish-inspired richness.” Choose from a signature cheesecake glaze, warm honey butter glaze, or opt for it savory-style with jalapeños, cheese, or crispy bacon.

Pop Rocks Margarita

This unique creation combines the fizzy sensation of Pop Rocks with a classic Margarita “to capture the magic of the State Fair of Texas with an unforgettable twist.”

  • Where? Texas Holy Fried Ribs and Fusion BBQ in the Tower Building and Texas Holy Sopapilla Factory in Cotton Bowl Plaza

Rodeo Roper Pretzel

If you need a quick snack, consider trying a Stiffler’s Rodeo Lounge Roper Pretzel, finished with rich, tangy barbecue sauce.

Swirly Pearls

Enjoy soft serve ice cream topped with creamy milk tea, boba pearls, and brown sugar to escape any lingering Texas heat.

Texa-Misu

This new entrant to the State Fair of Texas brings together tiramisù and espresso. Expect layers of Quadratini wafer cookies covered with creamy, frozen “cremespresso,” and finished with whipped cream and more cookies.

The State Fair of Texas will run from September 26 through October 19, 2025.
