Chef Omar Flores is set to open two new establishments in Dallas this year: a steak and seafood destination, Casa Brasa, and a Mexican restaurant, Maroma.

The busy, award-winning chef has roots in El Paso, where he began honing his culinary craft at his family’s restaurant. Flores went on to earn a degree in Hotel & Restaurant Management from New Mexico State University and later graduated from the Culinary Institute of America in New York.

This background set the foundation for his debut in Dallas with Driftwood. His cooking at Driftwood ultimately earned him two James Beard Foundation nominations for Best Chef Southwest in 2015 and 2016.

Fast forward to 2025, and Flores is now preparing to launch two new restaurants in Dallas.

Taking inspiration from popular open-fire grills used in Latin America, Casa Brasa is set to open first this summer at 8111 Preston Road. The term ‘brasa,’ Spanish for ember, symbolizes the communal act of gathering around an open flame to cook, enjoy food, and celebrate with others.

Casa Brasa will focus on contrasting cuisine; think sushi rolls with Latin flair. Expect an open-fire grill, a sushi counter, a raw bar, and more, once the establishment opens its doors.

Flores is also set to open Maroma in September at 1333 Oak Lawn Avenue in the Dallas Design District.

Hungry patrons can expect dishes like aguachiles and ceviche. Maroma will similarly emphasize sharing and communal dining, a nod to its coastal Mexican inspiration.
