On a list of the top 24 chocolate shops compiled by American Attractions, Dallas’ very own Kate Weiser’s Chocolate ranked at No.14.

Kate Weiser’s specialty bonbons feature creative flavor combinations decorated with colorful Jackson Pollock-esque paint splatters.

Founder and Kansas native Kate Weiser became an executive chocolatier at Chocolate Secrets in Highland Park after she moved to Dallas. Weiser experimented and developed her hand-painted chocolate signature while there.

“For me, chocolate is the most challenging and rewarding medium in the culinary arts. It is a never-ending learning experience and my true passion,” Weiser said.

Weiser started her own company in 2014 and now runs three separate locations: Trinity Groves, NorthPark Center, and the Shops at Clearfork.

Along with being named one of the top 24 chocolate shops in the U.S., Oprah put Weiser’s chocolates on her Favorite Things List in 2018, and in 2014, Dessert Professional Magazine named her one of the top 10 chocolatiers in North America.

The Kate Weiser website details the careful process of making her signature bonbons, which begins with polishing the chocolate molds. This ensures that each bonbon has a shiny finish.

Next, the molds are painted with cocoa butter, using abstract designs to “express the flavor of the bonbon using color.” Next, the bonbon shells are made, which pull the color off of the mold and onto the chocolate as they set.

The molds are then filled with Weiser’s unique, all-natural flavored ganache, caramel, pate de fruit, and gianduja. The bonbons must be left to set for 12 hours. After this, they are sealed with tempered chocolate with the Kate Weiser seal on them and sold.
